Description
The masterclass will be dedicated to the practice of Appassimento, one of the most distinctive processes of Valpolicella’s winemaking tradition, that, through which the natural dehydration of the grapes gives rise to wines of remarkable structure and complexity. During the masterclass, the initiative launched to obtain recognition of the “ritual of resting of Valpolicella grapes“ as an UNESCO Intangible Cultural Heritage will also be presented. The project aims at to highlight and preserve a centuries-old tradition that represents a fundamental element of the region’s cultural identity.
