Wine and food tourism is rapidly evolving. Visitors are no longer looking only for guided tours or standard tastings, but for authentic experiences that allow them to connect with territories, communities, and local cultures. There is a growing desire for real encounters with producers, for stories that reflect the landscape, for sensory immersion, and for hands-on agricultural activities. This workshop is designed to provide wine tourism operators with practical tools to design and structure experiences aligned with the Slow Food Travel model. Through examples, case studies, and discussion, participants will explore how to transform what a territory already offers—knowledge, agricultural production, landscapes, traditions, and relationships—into high-quality experiential offerings that meet contemporary demand. The goal is to understand how to build authentic yet clear, structured, and marketable proposals, while keeping the value of local communities and the preservation of place identity at the center.
