Wines have always been made by following many different winemaking methods and techniques. Classic white wines are straw-yellow in colour, fresh, lemony and herbal, but white wines made by extended skin contact turn a definite orange colour and are very tactile in the mouth, giving life to a whole new category of wines (orange wines). Other times, the exact same grapes handled only slightly differently in the cellar also give remarkably different wines. In many parts of the world, sparkling wines are made by secondary fermentation in the bottle, but it was an Italian, Martinotti, who developed the autoclave method by which to make bubbly wines of real note, In this tasting, twelve different wines that speak of different winemaking techniques.
